A favorite lunch - Ful Mudammas
Whether you call it Ful, Foul, or Fuul or in combination with Mudammas, Medames, Medammas, or Moudammas. There are just as many recipe variations of this comfort food as there are names.
This is my go to recipe for a super easy Ful.
Quick Ful Mudammas
1 Can of Fava Beans
1 Can of Garbanzo Beans
drain the liquid off the beans and rinse in a colander under water.
Put beans in a saucepan and add
1/2 Cup Water
boil for 10 minutes or so and let cool just slightly
Mash two cloves of garlic with a small amount of salt or to make this extra quick use some minced garlic that comes in a jar.
Add garlic to beans and mix well.
Next add
Olive Oil - use the best quality you can find. I just drizzle this onto the beans without measuring (around 1/8 cup or a bit more).
1/2 onion - chopped
Juice of 1 Lemon
1 teaspoon Cumin
1/2 teaspoon Salt
1/2 teaspoon Coriander
1/8 teaspoon Cayenne Pepper
Mix well and with a spoon mash the beans against the side of the pan, mashing about half of them.
Garnish with tomato, cucumber, radish, romaine, hard boiled eggs in any combination using whatever you have.
Drizzle with more olive oil and sprinkle with coriander or cayenne.
Serve with bread and enjoy!
